Moisture, light, and heat are spice enemies. Learn the right containers, placement, and shelf life for every type of spice in your kitchen.

Spices lose their aroma and potency when exposed to heat, air, and light. Keep them in airtight containers, away from the stove and direct sunlight. Glass jars or tins with tight lids are ideal for preserving essential oils.

Whole spices like cardamom, cloves, and peppercorns retain flavour longer than ground powders. If you buy in bulk, store the extras in a cooler place and use a smaller jar for your daily cooking needs.

A simple rule is this: if a spice smells flat, it likely has lost its volatile compounds. Use within 6 to 12 months for ground spices and up to 2 years for whole spices for the best flavour.
