Byadgi vs. Kashmiri Chilli: What's the Difference?

Both are celebrated Indian chillies, but they serve completely different purposes. One gives colour, the other gives heat. We explain the Scoville difference and best uses.

Byadgi chilli is known for its deep red colour and moderate heat, which makes it a staple in coastal and South Indian dishes. Kashmiri chilli, by contrast, is milder and more likely used for vibrant colour rather than heat. The difference is not just taste; it changes the visual character of the final dish.

A Byadgi chilli can contribute body and a luscious red tone to curries and gravies. Kashmiri chilli is often preferred in dishes where appearance matters as much as flavour, like tandoori marinades or spiced gravies.

When shopping, read both the origin and the heat profile. For a bright, aromatic curry, Kashmiri chilli works beautifully. For deeper warmth and complexity, Byadgi is hard to beat.
